Cut the tomatoes into quarters or halves, depending on the size. Toss with the red onion and extra virgin olive oil and set aside.

Put the rapeseed oil, brown onion, garlic, liver and bacon into a large frying pan on a medium heat. Add the herbs and fry for 10 minutes, or until the onion and meat begin to brown nicely, stirring constantly.

In the meantime, bring a large pot of salted water to the boil and cook the pasta according to the packet instructions. Drain in a colander, setting aside some of the pasta water. Stir in the tomato purée and red wine vinegar. Taste and season with salt and pepper.

Toss the liver and bacon with the tomatoes and pasta and loosen with 1or 2 tablespoons of the pasta water. Pour into a large serving dish, sprinkle the extra herbs on top, and serve immediately.

Tip

The liver and bacon can be replaced with beef, lamb or pork mince.

Get ahead

The liver and onion mixture can be made a day ahead. Simply reheat in a pan with 1 tablespoon of oil.
